Weekend Cooking- Cabbage and cookies.

March 2. Roasting.


On Monday night, in a quest to use up the cabbage from Friday's noodles, I made a quick stirfry using napa cabbage, pepper bacon, sliced fresh mushrooms and thin sliced onions. I made a sauce of sorts with soy sauce, lime and garlic and served it with small steaks and rice.  Mike and I both declared it to be terrific. The kids, not so much.  The next day for lunch I had the very last of the cabbage, prepared the same way, but without the bacon. Not NEARLY as good.

It was all the way until Wednesday of this week before we tried a new official recipe. Wednesday was a mom-declared snow day, and by mid-afternoon I was tired of the boys pestering me for... anything and everything. I told them if they would leave me alone, I'd make cookies. Using my tried and true method of "Google a recipe and use the first one with a lot of stars and a decent number of ratings" I found this recipe for chewy oatmeal chocolate chip cookies.  I read 4 or 5 reviews and took the advice to up the flour and baking soda slightly. I also replaced the walnuts with chocolate chips, cause I didn't have walnuts.  I did not have the patience to chill the dough before using, so my cookies spread. Hey! Look at me writing one of those horribly annoying reviews! "I did everything exactly as they recommend, except used completely different ingredients and methods and SURPRISE, it didn't turn out!" Except these did. Very yummy cookies.


On Friday we decided that we really didn't want pasta again and since we aren't big fish fans I had to come up with something different. I roasted 3 bell peppers, an entire big container of mushrooms (quartered), 4 onions, and two heads of garlic and we made quesadillas with them. I also roasted a few cherry tomatoes and made roasted tomato salsa.  Highly recommended, both for eating AND for making your house smell terrific. The boys had cheese quesadillas.

  1. Great idea to stir fry the cabbage! Cookies sound great, love chewy. The quesadilla's sound fantastic, I'd love them with roasted vegetables!

    1. The quesadillas were terrific. We did some with shredded cheese and some with feta.

  2. I love how you used the cabbage for a couple of meals. And spread-out cookies are just bigger, right? Still yummy. I like quesadillas but haven't made them with roasted veggies -- that sounds really good.

  3. I like how you explain how you did the cookies exactly according to recipe - not! Funny! Yeah, I always wonder why my meal don't turn out as planned - for the same reason, too.

    1. They really were good. The mushroom, onion, feta combo was completely different from the onion, pepper, mushroom, cheddar jack combo.

  6. I'm so terrible at roasting veggies--need to be better about it. I usually roast little potatoes but sometimes they're just not cruchy like we like them.

    I've NEVER cooked cabbage but I do love it wilted with bacon. mmmmm.

  9. I thought it was cute that you said everyone liked the stir fry WITH the bacon more than the stir fry without the bacon. :). I am a bacon lover myself(!). The quesadillas sound great too!

  10. Everything sounds delicious! You were wonderfully resourceful with your vegetables and left overs. I never would have guessed it, but cabbage is one vegetable that everyone in my family likes--including the girls!

  13. Yum all the way around. I've been thinking far TOO LITTLE about cooking lately and not making weekday eating plans and all that. Very bad for our health around here. I'm inspired now!
